Mandljevo mleko z bučo butternut /Butternut Squash Mylk. Yum!

Kakšni lepi jesenski dnevi! Ima me, da bi cele dni hodila okrog po hribih, skozi gozdove in kaj vem kje še vse, ter samo škljocala in škljocala. Nekaj dni nisem imela pri sebi fotoaparata, ker se je potepal po Moskvi, a je bil Uroš (halo, Srce:))dober kot vedno in je slikal vse naše bolj ali manj posrečene poskuse v kuhinji, tako da recepti in fotke bodo.

Najprej moje čečkarije kar tako: danes zjutraj, ko sem gledala megle v dolini, sem se kar na lepem počutila tako nekam jesensko, da sem sedla za mizo in vrgla na papir tole:

Autumn

Lacy mists drifting by, making the world appear so splendidly mysterious. Tiny spherical miracles shimmering in the grass. My feet cold, alive and invigorated. Taking in the pleasant feeling of the cool, solid ground under my feet. Feeling the ground, feeling its grounding energies feeling me in. Maybe it is the last time this year. The shoes with rubber soles…how I do not like them. My feet want to feel…moist grass, warm pebbles, even sharp stones and gravel are better than rubber sole shoes.

 The air – so rich, oxygen rich but there is something else to it…the scent of autumn. The cool, earthy  smell of the woods.  The smell of far away mountains waiting calmly to be covered in thick, brilliant blanket.

Autumn is a dreamy, sleepy season, when life seems to switch to slow-motion. Is it the warm autumn light that makes it appear so slow? Or is it the sounds? Summer is shrill and loud, always reminding me of my primary school teachers. Autumn sounds softer, more subdued. It has a mellow, whispery voice like listening to a faerie’s lullaby in the depth of a forest. Not that I would know how faeries sound but they must sound like autumn. Hearing the autumn’s voice makes me feel warm and cosy, makes me feel safe, knowing that everything is, as it should be. Life flows and it always will. They say that everything changes, that what once is will no longer be. But not the flow of life. It will always be right here, all around us, swirling us around like brown leaves swirl in the wind. Life, flowing and winding and going uphill and down, with us or without. Just like the ocean. She always ebbs, with fish in it or without them. It just ebbs.

 To surrender to the flow of life, to be a part of it, instead of resisting it…that is my practice today…and every day.

Ni ravno tisto, kar je bilo v meni, ampak dobro, tako nekako sem se počutila zjutraj.

Zdaj pa k receptu. Ne vem kako točno bi temu rekla: mleko, puding, smoothie. Lahko pa tudi nekaj vmes, recimo smluding. Če le lahko pridete do buče butternut ali pa katerekoli druge sladke buče, potem poskusite. Mislim, da vam ne bo žal. Zadeva je kremasta in takšne barve kot Dr. Oetker vanilijev puding. Samo okus je pa boljši. Se mi zdi, da malo spominja na medenjake…Kot bi pil medenjake.

Recept:

1 skodelica mandljev (naša je velika 300 ml:)

2 skodelici buče butternut (katerakoli muškatna buča je vredu, naj bo pa čimbolj sladka)

2 in pol skodelici vode

1 žlička cimeta

1/4 žličke ingverja v prahu

1/4 žličke kardamoma

1 žlička vanilijinega ekstrakta

malo soli

Mandlje operemo in namočimo za 12 ur, da poženejo drobne kalčke. Zjutraj jih olupimo. Če vam koža (mandljeva, seveda) dela preglavice, jih lahko mirno za nekaj ssekund prelijete z vrelo vodo pa ne boste še ničesar dobrega v njih pokončali. V blenderju zmešamo vse sestavine iz recepta, razen buče. Precedimo skozi nekaj bombažnega. Jaz uporabim kar robec. Mandljevo mleko zlijemo nazaj v blender, dodamo na koščke narezano bučo, mešamo, mešamo, prelijemo v kozarec in dober tek!!

OK, for all of the English speaking guys: try this if you have some butternut squash at hand. It’s delish, I promise. Just make almond milk, spice it up a bit with ginger, cinnamon and cardamom. Strain ingredients through a piece of cheesecloth or nut milk bag, pour back in the blender, add butternut squash. Blend and enjoy. It tastes like drinking gingerbread.🙂

This is the recipe:

1 cup almonds

2 cups butternut sqush

2 1/2 water

1 tsp cinnamon

1/4 tsp  dry ginger

1/4 tsp cardamom

1 tsp vanilla extract

a pinch of salt

    jest sem nardila tole. Sem imela za kosilo. Kako je bilo dobr!!!!!!!! Res spominja na eno mešanico vanilijevega pudinga in medenjakov. Kje pa ti dobiš te recepte? A se to kar sama spomniš? Ker so res okusni pa drugačni. Ker se ne bi človek lih spomnu, da da v mleko bučo. Sem pa jaz to nardila z ovsenim mlekom, ker nisem imela pripravljenih mandljev. Sploh nisem vedela za tako mleko, da ga sam narediš doma. Pa not sem dala še mal javorjevega sirupa in še eno pest rozin. Njami!! Ne vem, če ne bom zvečer spet ponovila pa jutr tut. Jutr bo en mesec kar sem na surovi hrani. Pa še nisem imela nobene krize. Sej to gotov bolj pol pride. A kako?

      Mateja, živijo,
      super da ti je bilo všeč. Verjetno je res še boljše, če malo zasladiš, samo jaz se sladkorjev bolj izogibam, ker sem imela včasih težave s kandido. Zdaj sem se pa kar odvadila sladkih okusov in mi je hitro preveč. Recepte poberem po netu, kakšne se spomnimo sami doma, nekaj imam tudi “surovih” kuharic, tako da…malo mešano. Čestitam za prvi mesec! Ampak se nima smisla mučit, ko ti ne bo surova hrana več odgovarjala pač zamenjaš spet za kuhano pa je. Važno je dobro počutje in veselje, nima smisla da ti hrana dela stres.

    Tale recept mi deluje kar všečen, vendar ne poznam buče butternut in me zanima kje jo dobiš?

      Nany, živijo. Buča butternut je v bistvu maslena buča. Mi jo imamo doma na vrtu, včasih pa se jo najde tudi v bio trgovini Kalček v Šiški, v Ljubljani. Lepo se imej.
