Cauliflower Hemp Seed Sauce / Omaka s cvetačo in konopljinimi semeni

Hey, my Sunshines. How are you all doing? I hope you’re reading this barefooted and wild-haired and feeling happy, free and summery. I tend to post recipes in Slovene only but this one is too scrumptious for anyone to miss. It’s also super easy and quick to make and of course super nutritious, like all organic vegan raw dishes. This has got to be the most creamy semi-raw sauce I’ve ever made and the taste is…is beyond words, so head off to your kitchen and….off we go.

For 3 hungry vegan souls you’ll need:

2 cups cauliflower florets

½ cup hemp seeds

½  smallish zucchini

¼ cup chopped onion greens

handful of fresh basil

some fresh oregano leaves

some fresh parsley

a bit of fresh chilli

2 tsp miso

1 tbsp raw tahini

1 tsp hemp butter

1 tsp ground cumin

1 tsp ground coriander

1 tsp turmeric

2 tbsp olive oil

1/5 cup water

salt to taste

 Heat 2 tbsp oil in a frying pan. Add cumin, coriander and turmeric and mix well. Add cauliflower and just enough water to prevent it from scorching. Simmer on a low heat for a couple of minutes, stirring occasionally.  You do not need to saute the cauliflower, you can simply place it in a dehydrator for an hour to soften or even leave it raw. The sauteed variety however, gives the sauce a heavenly creamy texture.

Grind hemp seeds in a coffee grinder.

Toss all ingredients into the Vitamix and blend away till creamy. Pour over kelp noodles, spiralized zucchini or even use as a dip.

    Tanja, kako mikavno in okusno zveni. Zagotovo poskusimo. Hvala za nove namige. Sem že našla par idej za Timejin rojstni dan oz. piknik. Jupi!

    Tale recept me je takoj navdušil, ker med sestavinami ni avokada ali oreščkov, ki so stalnica med presnimi omakami in tako si res kdaj zaželiš kaj lažjega. Tako, da nisem zdržala, da ne bi preizkusila recepta že danes, pa čeprav nisem imela pri roki vseh sestavin. Namesto cvetače sem uporabila brokoli in to samo cvetke, brez stebelc. Marinirala sem ga z oljčnim oljem in soljo in ga 1uro “mehčala” v dehidratorju pri 125F. Konopljino maslo sem nadomestila z dvema žlicama semen, in ker nisem imela svežega čilija sem dodala 1/8 žličke kajena in namesto surovega tahinija sem uporabila Rapunzel tahini (Kalček). Tudi ta varianta je božanska. Z njo sem prelila na zelo tanke lističe narezane majhne bučke, ki sem jih tudi marinirala z oljčnim oljem, v prah zmleto posušeno domačo baziliko in soljo in jih 1 uro dehidrirala pri 115F. Za zraven smo pa imeli skledo ljubljanske ledenke z naribanim mladim korenčkom in kumaro, potreseno s sesekljanim drobnjakom in peteršiljem. Zelo okusen in lahek obrok za 5 zvezdic.

    Čeprav zgleda odlično, me ob prebiranju cele strani sestavin kar malo zvije. Mislim, da bom ženi dovolil, da jed pripravi, seveda ji bom pomagal, a le kot kuharski vajenec ( podajal, pomival, pospravljal po kuhinji), okušal pa v nadaljevanju kot pravi chef. Izkušnje mi pravijo, da bo res dobro. Tanja, enkrat sem ti sicer že predlagal, ampak res bo čas, da napišeš eno knjigo z recepti za vegance, jedi pa pretežno surove, sem pa tja pa tudi kaj kuhanega. Če ne boš našla založnika, priskočim na pomoč, verjemi pa da bo razprodana momentalno, sploh še, če boš k vsakemu receptu naapisala uvod, podoben današnjemu. Če pa imaš v rokavu še kakšen recept za vegansko sladico, ki bi lahko popestrila praznovanje rojstnega dne, se pa v naši družini toplo priporočamo.

    Tanja, hvala! Tudi mi z nekaj priredb (brez čilija in dehidratorja, pa z mletimi semeni namesto masla in s paličnim…). Okusno, zanimivo in… za ponovit.
